Bruschetta Chicken

This is a super easy weeknight dinner. I always keep this in the dinner rotation. You can make the first part of the recipe whenever is convenient for you. Baby is napping, kids are at school, or right as your starting meal prep. Even over night would work. It would give all the favors more time to blend together. Also you can marinate the chicken the night before or 5 mins before! Hope you enjoy!

Bruschetta Ingredients

5-6 Roma Tomatoes diced

1 tablespoon of basil chopped

3 cloves garlic minced

2 tablespoons olive oil

1 1/2 teaspoons balsamic

salt and pepper to taste



Mix all ingredients in a bowl. Cover and refrigerate until ready to use.




Chicken Marinade


3 tablespoons of olive oil

1 tablespoon of balsamic

1 tablespoon of Italian seasoning


Mix all together in zip lock bag or bowl. Pour over chicken and refrigerate until cooking.



Instructions


Heat a tablespoon of olive oil in a skillet over medium heat. Pan fry chicken flipping once until it reaches temp of 165.

Plate chicken once done and top with bruschetta mixture. Sprinkle grated Parmesan cheese or Mozzarella if wanted.

I usually serve the chicken over a bed of garlic butter orzo and roasted asparagus.
